Easy Crock-pot BBQ Ribs




Ingredients:

Approx. 3 lbs. Pork Ribs
1 bottle Sweet Baby Ray’s Barbecue Sauce or your favorite BBQ sauce (18 oz)
2/3 cup Brown Sugar
1/4 tsp. Salt
1/4 tsp. Pepper
1/4 tsp. Garlic Powder
1/2 tsp. Chili Powder

Directions:

1. Combine brown sugar, salt, pepper, garlic powder, and chili powder together in a bowl. 
2. Rub combined ingredients on meaty side of the ribs. 
3. Cut ribs into sections to fit crock-pot. 
4. Place in ribs in crock-pot and cover all sections with BBQ sauce. 
5. Cook on low for 8 hours. 
6. Suction sauce off bottom of crock-pot every few hours and drizzle on top of meat. 

I served my ribs with asparagus and a loaded baked potato!

....and I'm back!

I've been MIA from this little blog of mine for far too long. I mentioned this to another blogger and she responded that she would rather have quality content rather than just writing to fill space. I couldn't agree more. But, with that being said, I have a ton of stuff going on that I really should be writing about! So I'm going to keep this post short and sweet before I bite off more than I can chew. I'm going to list some of the things I will be better about blogging about (please hold me to this!) in the next couple of weeks! Hopefully that will help me get back into a groove. I've been good about posting recipes but those are so easy peasy so I don't want to count those. Okay here goes:

-the beginnings and adjustments of being a newly married wife after not living together all the time before being married
-the excitement and hesitation of a new job
-summer plans/vacations
-the SEVEN weddings we have this year
-the life of being a spouse to someone who is one of the hardest workers ever
-my favorite and least favorite things about the current seasons in MD

Okay so if I do one a week from next week on I will at least have SOMETHING to post about until the first week in July. Holy smokes...how is it already almost June??

I just went to the farmers market after work today and got 9 perennials, a ton of tomatoes & peaches, bananas, an avocado, jalapenos, and asparagus! So pumped about this! I can't wait to make some fresh salsa later this week. Ooh I'll add that to my list of posts for a new recipe!

Cinco de Mayo Quesadillas!


We are having a Cinco de Mayo potluck tomorrow at work. I was having the hardest time trying to pick what to make! There are so many good things to make!! I settled on quesadillas so that I could make them tonight and the can be served cool tomorrow!

Ingredients:

10-12 flour tortillas
3 cups of shredded cheese
2 cups of salsa
1 can of refried beans
1-2 chicken breasts cooked & diced/shredded
1-2 cups of sour cream

Directions:
I made 1/2 of the quesadillas cheese, beans, & salsa and the other 1/2 cheese, chicken, & salsa

1. Mix salsa and cooked chicken together. 

2. Spray your pan with cooking spray, set stove to medium/medium high and put one tortilla down. 

3. Fill with ingredients & top with another tortilla. (I put the cheese down first, other ingredients, and a little cheese on top to stick it all together)

4. Let brown about 2-4 minutes and flip. 

5. Once both sides are brown set to the side and let cool. Cut with pizza cutter and serve with sour cream.
