Bang Bang Chicken & Pasta


Here's another recipe from my fabulous friend Gianna! I adapted some of it. Scott was basically licking his plate clean. This sauce would be great on shrimp, fish, chicken tenders, pretty much anything! 

Ingredients:

  • your favorite pasta (I used linguine)
  • 3-5 boneless chicken breast, cubed
  • 2 cloves garlic, minced
  • chopped parsley for garnish
for the sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup + 2 tbsp Thai sweet chili sauce
  • 1/2 tbsp honey
  • 1 tbsp sriracha sauce
  • 1 tbsp lime juice or sweet and sour sauce



Directions:

1. Lightly grease a saute pan and turn stove to medium high. Add garlic and cook until aroma of the garlic comes out. Add in chicken pieces and cook until chicken is cooked through and slightly browned.
2. In a large pot, add water and bring to a boil. Add pasta and cook until done. Drain out water when pasta is finished.
3. While pasta is cooking, prepare the sauce. In a small bowl, make the sauce by combining all ingredients and mixing with a whisk until smooth. 
4. Add chicken to pasta. Pour 2/3 of the sauce into the hot pasta and toss. Slightly warm the remaining sauce (microwave is fine). Dish out pasta onto plates and add remaining sauce on top. Garnish with parsley if you want to be fancy!

just a little project







Just decided to do a little project for my house and new office! Some of these are real, and some are fake! I love that you can't tell which are the fake ones! I'm always in search of indoor plants. I haven't always been the best at keeping them alive, but I'm getting better and better. 

I got the real ones from my beautiful friend's bridal shower that I attended this weekend. It was such an amazing weekend. She got some awesome stuff from her shower and we had such a blast later that night for her bachelorette! She's a wonderful friend from college. I'm so lucky to be in her wedding Memorial Day weekend! 

I'm looking for some food to whip up in the kitchen! Any requests? I really want to make homemade pasta but I'm kind of nervous!!

Crescent Roll Pizza


Best way to make a pizza...ever!

Ingredients:
1-2 cans of crescent rolls
Your favorite sauce, red/white/homemade/canned(mine is alfredo sauce, I'm a HUGE fan of white pizza)
As many toppings as you can fit on a pizza pie!

Directions:
Unroll crescent rolls into rectangles. Place in ungreased 11 1/2 inch x 16 1/2 inch cookie sheet. 

Press dough over the bottom and 1/2 inch up sides to form crust. Bake at 375 oven for 11 to 13 minutes or just until golden brown. 


Take out of oven. Add sauce, cheese, and toppings. Put back in the oven for 2-3 minutes or until cheese is melted. 


That sweet crust is so good when you have some spicy sauce or toppings!

surprise date night with an adventurous twist

This is what happens when I plan a date night...things just get a little ridiculous. Scott and I rarely have date nights. We'd much rather save money and stay in. I don't know if we have ever had a date night mid week! This all started when I was chatting with my bestie Gianna during work. She couldn't figure out what to make for dinner so we began throwing around recipe ideas. She found a recipe for Bang Bang Chicken. She sent it to me. It sounds amazing by the way. I will surely be making it and I will definitely share the recipe on here! Anyway, she said it was supposed to be the same sauce that they use at Bonefish for their Bang Bang Shrimp. Scott has been talking about these darn Bang Bang Shrimp for years. I had gone to Bonefish a few times but hadn't been in years. So I went online made a reservation and found a $10 off coupon. Thanks Bonefish!! I texted Scott and told him I had a surprise for him and that he needed to be ready by 6:30. Not that we needed an excuse but he had just gotten a raise at work and I have just recently accepted a position for a new job! It was time to celebrate.

Scott is the WORST at surprises. He always has to know everything that's going on. Which is why I love torturing with surprises. He immediately became antsy. He was texting me all day. As soon as he got home from work the questions began. Obviously, I didn't tell him anything. I love it when he gets antsy because it turns the surprise into a much bigger ordeal than it really is. So finally he was basically pushing me out the door at 6:30. We got in the car. I made him take ridiculous pictures. And then to his embarrassment I pulled out a blindfold. He was horrified and kept tilting his eat back because he didn't want anyone seeing him driving around in a car blindfolded. I, of course, got the biggest kick out of this.

Then the guessing began. "Did you buy me a corvette?!" (our favorite car that we both hope we will one day own and fight over) "I think I know where we are." I just kept telling him to hush. We pulled up in front of the restaurant and I told him to take off his blindfold. He looks around and says, "So, we're at the mall.." Yep hun, I made you do some ridiculous, goofy, shenanigans, all for a dinner date! He was cracking up (as you can see in the pictures) at how goofy my whole plan was. What can I say... I'm a natural at this date night thing!

We had an amazing dinner. We got some drinks, ate the famous Bang Bang Shrimp (highly recommend!), Scott got the wood-grilled Rainbow Trout, and I got Blackened Baja Street Tacos. We had such a sweet waitress that knew Scott's mom. She was adorable and congratulated us on getting married and said how beautiful all our pictures were from that day!

Easter Weekend

Happy Easter!! I hope you all had a great weekend. Our weekend was perfect!! I'm pooped and am already cuddled up on the couch with my sweet husband and a cup of tea. On Saturday we went to Millersville University where Scott went to college. He had an Alumni baseball day. It was FREEZING! Whenever we go it's always so windy. But we really froze our tushes off watching a double header. We were able to sneak away and get the BEST cheese steak subs ever. Literally the best. We could eat the bread they make it on for every single meal. We always get extra bread so we can have leftovers. It never lasts long!



I swear my husband loves it when I ask him to take a ton of pictures for me!


Saturday night we went out with a huge group of friends and family to watch the basketball games. Well, really all the guys wanted to watch and it gave us wives and cousins a chance to catch up. Unfortunately, Scott ate something that didn't settle with him and he was sick all night :( He was a trooper when it came to Easter Sunday.

Sunday we started with Mass at our beautiful church. I'm so happy that we found and belong to St. Marks. The energy of this parish is so beautiful. I almost want to start dancing every Sunday when we're singing. I really want to get more involved. I was always so involved growing up. I need to make more time now that we are part of this congregation to do more.


Then we went to Scott's grandfathers for lunch. They have a Polish tradition of eating kielbasa and noodle soup. His grandfather makes it every year for Christmas and Easter. We did a little Easter egg hunt until my sister in-love and I got chilly. So we came inside and took goofy pictures.






Then we came home and the rest of our family arrived for dinner. We asked to host this year. I love having people over and having big parties. We got to use our fancy schmancy wedding china! We had about 15 people. Everyone brought food so we were just in charge of cleaning, prep., and cleaning up! Best way to host if you ask me!!

Good Friday



Today's weather reflects such a somber day for Catholics and Christians. Today is Good Friday. I try to take off of work every year on Good Friday. Most years I am able to do this. I always try to set aside some special time for prayer between the hours of noon and 3PM. It's a day of rememberance and reflection for me. It helps me to remember how amazing Jesus really is in my life. I am so blessed.

Spicy Honey Glazed Chicken

Hi everyone!!

I don't have a picture for this recipe because I haven't made it in awhile. Butttttt I've been thinking about it and it's already making my mouth water. So I will be making very soon and will add a picture! It always looks just as good as it tastes.  I usually make a little extra sauce so that I can put it over other food. It is AMAZING over really anything but especially mashed potatoes and veggies.

Spicy Honey Glazed Chicken
Serves 4

8 boneless skinless chicken thighs (or 4 large boneless breasts)
1 teaspoon salt
1 teaspoon fresh cracked pepper
1 teaspoon red pepper flakes
1 teaspoon chili powder
2 teaspoons paprika
2 teaspoons garlic powder
1/2 cup honey
2 tablespoons apple cider vinegar

Mix spices together and set aside.

Mix honey and cider vinegar and set aside.

Cover both sides of chicken in seasoning, set flat onto sheet pan. When all chicken as been seasoned put under broiler.

Cook for 5-7 minutes on one side and flip.  Cook for a 5-7 minutes on other side.  Flip again and then baste the chicken in honey/cider mixture.  Be sure to really get the chicken covered.  Add to oven again and let it cook under the broiler for a few minutes until the honey starts to thicken up and glaze.  Add an extra swipe of honey if you like your chicken nice and sticky.

Take chicken out of oven and let rest for a few minutes.
